GRILLING FISH

Grilling fish can be a challenge, as it is easy to overcook and it can also stick to the grill. Two common causes of sticking is not getting the grill grids hot enough and turning the fish too soon after putting it on the grill. Make sure to liberally oil the fish, and don’t turn the fish until it sears on the bottom so that it releases easily from the grids. Most recipes for fish call for grilling it quickly over direct heat, which means directly over the fire or heating element in the grill. Plank-cooked fish uses indirect heat.
