I've been associated with Sonoma-Cutrer Winery since they began 40+ years ago. This has included regularly sending recipes for new release wines to their wine club members. Here is the latest version. Some of these wines are only available at the winery, or through their wine club.
STEAMED SALMON CANTONESE-STYLE
Serves 2
Steaming fish fillets or whole fish is a time honored, banquet preparation in China. Quick and healthy, it’s a technique we should utilize it more often. Try this with the multi-dimensional 2023 Russian River Chardonnay.
12-ounce salmon fillet at room temperature (out of the refrigerator for 30 mins)
2 teaspoons Shaoxing wine or dry sherry
½ teaspoon salt
2 tablespoons julienned ginger
2 scallions (cut on a diagonal)
1 tablespoon soy sauce
Before beginning the recipe, leave the fish out at room temperature for 30 minutes. Avoid steaming the fish directly from the refrigerator, which may cause under or uneven cooking. Note that the fish should be fully thawed before coming to …
